Inventory, par, cocktail specs, and pour cost — all in one place.
CubitTek™ · The Ground-Truth Layer
Grace is the brain. CubitTek is the senses.
Every number in GraceNetOS today is a should-be — theoretical pour cost, par counts, food cost off recipes. CubitTek turns every should-be into is. Smart mats, cameras, and sensors watch the physical restaurant in real time and feed Grace the truth: what really poured, what really left the shelf, what’s really happening on the line.
Vision · in development — this is the roadmap, not live hardware
01
Smart bar mats
Scales that know the bottle — and catch the theft
Every bottle sits on a weighing mat that knows its brand and fill level. Pour a drink and the weight drops — Grace knows exactly how many ounces left the bottle, and checks it against the cocktail’s spec pour. Over-poured? She sees it. And the one that matters most: a pour with no matching ring-in at the POS — a bartender pouring for a friend and not charging — fires an alert to the manager in real time.
Closes the theoretical-vs-actual pour cost gap the bar module exposes — the single biggest uncontrolled leak in the house.
02
Smart shelves + CubitCam
Inventory that counts itself
Weight mats and vision in the walk-in and dry storage watch product move. Grab a bottle of hot sauce or a single apple and Grace sees it leave and decrements inventory live — no Sunday-night counting, no guesswork. The number on the screen is always true because it’s watching the physical world, not waiting for someone to write it down.
Real-time inventory truth — variance, reorder, and food cost stop being estimates.
03
Environmental & equipment sensors
Catch the failure before you lose the product
Temp sensors on the fryer, oven, walk-in, line rails, freezer, and coolers — plus equipment health on compressor cycles, hood status, and fryer recovery. Grace watches 24/7 and reaches out first: a walk-in drifting warm at 2am, a propped freezer door, a compressor working too hard. You hear about it before it becomes spoiled product or a failed health inspection.
Cold-chain and equipment protection — the HACCP log fills itself, and a $2K walk-in loss becomes a text at 2am instead.
04
Zone & access intelligence
Who’s where, when, and for how long
Motion and door sensors by zone — traffic, dwell, after-hours activity, back-door and dry-storage access. Grace ties it together with the rest: an after-hours open at the walk-in, a dining-room dwell pattern that says you’re understaffed on the floor.
Loss prevention and floor intelligence, tied to the same brain.

The gap between should-be and is — is where the money lives.
The software builds the plan. CubitTek proves it against reality and flags every place they don’t match: the over-pour, the un-rung drink, the shrinking walk-in, the failing compressor. That gap is invisible today. CubitTek is how you see it.

GRACE
This is your plate spec sheet. Portions default by category (starch 4oz · veg 3oz · sauce 2oz · garnish 0.5oz); protein is explicit. Costs pull live from your costed recipe book. I will learn each plate's spec-vs-actual once the kitchen starts logging.
Message Board
Posts that do something — 86 an item, add to order, log a repair. Grace watches and drafts actions for you to approve.
Temp Log
HACCP temp checks — coolers, hot holding, cooked proteins. Grace flags anything out of safe range.
Study guides, practice mock tests, and the graded certification test — for kitchen and server staff.
Banquets / BEO
Upload a BEO — Grace scales the recipes, times the prep, checks what’s in-house vs. what to order, and builds the pull list.
Set the covers, appetite, and the menu, and Grace proves the real per-person food cost against the set package price — every number pulled live from your inventory book, nothing estimated.
Pick a day with parties and Grace consolidates every event, batches shared items once, and lays out a day-by-day make-ahead plan keyed to each item's shelf life. Override any call to teach her — she remembers.
Line Checklists
Opening & closing checks by station. Check them off; Grace shows completion on your cockpit.
Waste Log
Log what gets tossed and why. Grace totals the dollars — this is where hidden food cost lives.
Grace · The Development Kitchen
Your R&D partner — a composite of 18 of the world's greatest chefs. Create dishes, elevate what you have, build menus, or convene the council. Every dish costs live against your inventory and saves to your scratchpad.
Guest Intelligence
Paste your reviews — Google, Yelp, comment cards — and Grace tells you what guests really think, tied back to the kitchen. Trends build over time so you see what’s working and what to fix.
Certifications & Compliance
Every crew member’s food-handler, ServSafe, allergen and alcohol cards — tracked with expiry dates. Grace warns you before anything lapses, so an inspector never catches you out.
Production Par Sheets
Set a par for each prep item — portions per cover or a flat nightly number — and Grace tells you exactly what to make for tonight’s covers, minus what’s already on hand. No more running out or over-prepping.
HACCP Logs
Inspector-grade cooling logs and delivery temp checks the standard temp log doesn’t cover. Grace flags a fail the moment a cooling window is missed or a delivery comes in out of spec.
Blended Food Cost Planner
Hit your target food cost across the whole menu — not dish by dish. Plan the spread for a new menu, see where you land under different crowds, then track real à la carte + banquet numbers as they come in.
Menu Engineering
Every item mapped by popularity and profit — Stars, Plowhorses, Puzzles, Dogs — with a specific fix for each, straight from your sales data. Tap a problem item to send it to the Development Kitchen.
